This lot blends Topázio, Icatu, Catucaí, and Red & Yellow Catuaí — Brazilian cultivars chosen for balance, sweetness, and climate resilience. Dried slowly over 3 to 6 weeks, the result is a structured yet approachable cup with notes of berries, milk chocolate, and almond. Perfect for both blends and single-origin clarity.
Each lot reflects Brazil’s well-established infrastructure — predictable harvests, certified farms, and refined post-harvest systems. Cultivars like Catuaí, Topázio, Icatu, and Catucaí combine resilience with sweetness and clarity across roast profiles and brew methods.
PROCESS : NATURAL
At Fazenda Vinhal, ripe cherries are selectively harvested and sun-dried over 3 to 6 weeks on patios and raised beds. Regular turning ensures even drying and prevents defects. Temperature, airflow, and humidity are carefully monitored, blending tradition with precision to preserve sweetness and structure. The result: a clean, versatile cup with milk chocolate richness, almond body, and crisp berry finish.
