Cauca
Cauca is located in central-western Colombia, extending from the Western Cordillera to the Pacific coast. Because of its elevation and the influence of ocean winds, it is one of the cooler coffee-growing regions in the country. Coffee production here is largely carried out by indigenous and Afro-descendant communities. The region features diverse geography, including the Popayán Plateau, numerous rivers, and a volcanic mountain range.
Manos Juntas is a micromill based in the Sotará area of Cauca. Its approach focuses on streamlining processing steps and responsibilities.
This lot was purchased as fresh cherry on the day it was harvested and delivered to the mill. Upon arrival, Brix and pH levels were measured, and the cherries were placed into large sealed tanks for a five-day anaerobic fermentation. Each tank is labeled with the producer’s name to maintain traceability. During fermentation, nitrogen gas is introduced to support yeast activity. Brix and pH are monitored throughout to determine when the process is complete. The coffee is then cooled to 20°C to stop fermentation and remove microbial activity.
For naturally processed lots, the cherries are then held in tanks for an additional five days before being moved to solar dryers. The drying phase takes between 30 and 45 days.
