CAJAMARCA
Cajamarca is a semi-dry, semi-cool tropical region in the northeastern highlands of Peru, with fertile soils and high Andean elevations. All of these factors contribute to its strong potential for specialty coffee production, which has been growing in recent years. It is the main coffee-producing region in Peru, responsible for around 25% of the country’s total production.
Most coffee is grown by smallholder farmers working 2–3 hectares of land, many of whom practice organic farming. Producers in the region have traditionally worked independently, but the recent rise of cooperatives has helped improve the overall quality of coffees being produced.
LIMA COFFEE
Rony Lavan is an ambitious, quality-driven cupper who has spent his career working to bring out better and more distinctive coffees from small producers in Peru. While the country is emerging in the specialty coffee market after years of focusing on larger lots and certifications, Rony’s focus has been on identifying top-scoring coffees and developing the best possible cup profiles.
This lot has notes of apricot marmalade, brown sugar sweetness, and a hint of praline.
