“Sul de Minas” refers to the hilly region in the southern part of Minas Gerais state, where this coffee originates.
This lot is a blend of two varieties: Mundo Novo and Catuaí. Catuaí is a hybrid created by crossing Mundo Novo with Caturra. Mundo Novo itself is a natural cross between Typica and Bourbon, with origins that can be traced back to Yemen.
Together, these varieties produce a smooth and clean cup profile, with notes of chocolate and hazelnuts.
In Brazil, the most common processing method—used for about 90% of Arabica coffee—is the dry process, also known as the natural method. In this process, the whole coffee cherries are first cleaned and then dried in the sun in thin layers on patios.
